This section will look at the development of food studies as an academic discipline. A brief history of this developing field is followed by a survey of the existing food studies programs. Food studies methods are extremely diverse but this chapter attempts to outline some of the current trends such as a systems approach and an emphasis on experiential learning. Potential directions for the future, such as applied research and a policy focus, are also discussed.
