Abstract

Choline, a micronutrient commonly grouped with the B vitamins, is required for optimal nutrition. Choline-containing biomolecules, or derivatives, have a central role in many biological processes including neurotransmission, one-carbon metabolism, lipid metabolism, and signaling. The establishment of choline dietary recommendations, along with the availability of choline food composition tables, has led to a recent surge in the number of publications examining the role of choline in human health. This chapter provides a review of current knowledge related to food sources, metabolism, function, dietary requirements, and relationship to disease.
