Abstract

Foodborne illness is a major public health problem, and the home kitchen is believed to be a point of origin for many cases of foodborne disease. The importance of proper food handling in the home cannot be overstated. Pathogens are associated with a wide range of foods that are brought into the home, which means that consumer food storage and preparation practices are the final link to ensuring that home-prepared foods are safe to eat.
