Abstract

Many people consider grasses such as rice, wheat, maize, barley, and oats to be the “staff of life.” Grass seeds are rich in carbohydrates, which are major elements of the human diet; yet they are not the only sources of these nutrients. Many root crops (Table 30.1) are similarly rich in carbohydrates and contain other important nutrients as well.
