Cinnamomum cassia, called Chinese cassia or Chinese cinnamon, is an evergreen tree originating in southern China, and is widely grown there and other parts of southern and eastern Asia (India, Indonesia, Taiwan, Thailand Laos, Vietnam, and Malaysia). Among several species of Cinnamomum, the aromatic bark of C. cassia is commercially used as a spice. In the United States, Chinese cassia is the most common type of cinnamon used. The buds are also most commonly used as a spice, especially in India.
